The Holiday Cocktail – The Method

WThis is a simplified version of a cocktail from the seasonal drinks list. It's a large-volume prepared mix that is bursting with the tastes of a Christmas time, rendering it excellent for your holiday party. Save the extra syrup for morning drinks, puddings, or to make another batch of bikinis.

Bikini Recipe

Serves 10 servings

To make the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Drink (produces 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Citrus Syrup: Put all the components into a pan, bring to a simmer, agitating until the sugar dissolves. Then, take off the burner allowing it to reach room temperature entirely. Decant into an sterilised bottle, cap it and refrigerate it in the fridge, where it will keep for about four weeks.

To make Premix: Mix the specified liquid ingredients into a large bottle, let it rest for an hour, then filter it , ideally through a fine cloth, to ensure it's fully clarified.

For serving: Pour 85ml of your cocktail base to a stirring glass containing ice, gently stirring gently for about 60 seconds until cold. Strain to a cold coupe glass or a similar vessel, decorate with the cranberries and finish with a light spray of the essential oil over the top.
